Shapton Kuromaku Traditional Pro #12000 Ceramic Sharpening Stone
When considering finishing grit stones, it's important to consider a balance between refinement and bite left by the stone. Shapton's 12000 Traditional stone is near the limit of what we find usable for kitchen applications. it shines when used to finish knives used for fine slicing applications like sashimi or very delicate cutting of herbs and greens such as scallion or chives. This stone is ideal for uraoshi (backside of single bevels) micro bevels and straight razor finishing as well as for very hard, thin Japanese knives. This stone, like all from Shapton, wears slower than most comparable stones and works with a splash of water. It should not be soaked lest the stone soften and potentially crack.
