Frequently Asked Question about Takamura Knives

Takamura Takamura Knives - Japanese Cutlery

1. What is the difference between the different Takamura lines?

All Takamura knives we carry feature the signature High Speed Powdered Steel (HSPS) core (also known as R2 or SG2 steel). While they share similar materials, the Hana Damascus and HSPS (red handle) have distinct differences:

Series Blade Handle Price Saya Cover Other Notes
Hana Damascus 64-layer Damascus with an HSPS(R2) core Resin-treated compressed superior wood (Brown, octagonal) $$$$ Included Takamura’s signature line
HSPS (Red Handle) HSPS(R2) core with stainless steel Clad Resin-treated compressed wood (Red) $$ Not included An affordable yet exceptional piece that embodies the excellence of Takamura.

2. What is HSPS (High Speed Powdered Steel)?

HSPS stands for High Speed Powdered Steel, a material originally developed for cutting through metal. Unlike conventional steel, powdered metallurgy technology allows for evenly dispersed molecules, resulting in exceptional sharpness and edge retention. Takamura coined the name "R2" steel for the specific type of HSPS they use, but it is also sometimes referred to as "SG2 steel."

3. How do Takamura knives achieve high HRC without being brittle?

Despite their HRC 63-64 hardness, Takamura knives aren’t overly brittle due to:

  • Powdered steel composition, which maintains durability even at high hardness.
  • Expert tempering techniques, allowing the edge to stay strong without chipping.
However, due to their ultra-thin blade geometry, they are not suited for heavy chopping.

4. What sharpening stones should I use for Takamura knives?

Due to their high HRC, Takamura knives should be sharpened using Japanese Whet stones.

We recommend sharpening at a shallower angle to maintain their exceptionally thin edge. Recommended Stones:
Shapton Glass, Rockstar, and Traditional

📣 Do NOT use electric sharpeners, as they can damage the fine edge.

5. Where can I see and purchase Takamura knives?

MTC Kitchen (New York Mutual Trading) is the sole authorized distributor of Takamura knives in the US.
Visit our showroom in Manhattan to see and handle them in person:
📍 711 Third Avenue (45th St. between 2nd & 3rd Ave), NYC
📞 Call ahead: (212) 661-3333 to check stock availability.

6. Are Takamura knives only for professionals?

Takamura recommends the Hana Damascus series for users with knife experience due to their razor-thin edge. While non-professionals can use them, improper technique (e.g., rough chopping) can damage the blade.

7. What is the actual HRC of Takamura knives?

The official hardness rating from Takamura Cutlery is HRC 63-64.

8. Are Takamura knives made with R2 steel?

Yes. R2 steel is Takamura’s proprietary name for the High Speed Powdered Steel (HSPS) they use.

9. Can I order a custom Takamura knife?

While Takamura previously accepted custom orders, they no longer offer this service due to overwhelming demand. Their small team is focused on standard production and cannot pause operations for individual requests.

10. When will Takamura knives be back in stock?

There is no fixed ETA for restocks.
