These chopsticks are made using sturdy bamboo that grows in regions with extreme temperature differences called "Mousouchiku". The best bamboo is cautiously selected, and the finest part of it is used to create these chopsticks. Each pair of chopsticks is carefully crafted by hand, leaving the skin of the bamboo on the back throughout while smoothing the rest to create a rounded shape. Unlike the tapered tip, the grip of the chopsticks is thick and sturdy, making them very easy to use. They are often used by professional Japanese chefs for plating delicate kaiseki cuisine. The angled cut of the back end makes them useful for cooking dishes such as hotpots or other dishes where ingredients need to be added in.
