Tsukiji Masamoto Carbon Steel Santoku 180mm (7.1") with Wa-handle
This knife from Tsukiji Masamoto, which combines a traditional Japanese high-carbon blade with a Western style double-bevel edge, is a great choice for cooks who are more comfortable using Western-style blades but want the unparalleled sharpness and durability found in Japanese-style knives. While this blade is Western style, the handle is Japanese style right-handed D-shaped.
V1 is high in carbon and contains minimal impurities. This knife is made in the honyaki style, meaning that it is made with one piece of metal. The advantage of this is that you can change the bevel angle by sharpening it to your liking. With an HRC of 62.5-63, it has exceptional edge retention.
The santoku is a cross between a nakiri and gyuto. It is a multipurpose knife that can cut meat, fish, vegetables and fruit.
