How to use

The nitrogen wok pan heats up rapidly, so preheating with medium heat helps prevent food from burning. Apply oil to the surface of the pan for a non-stick-like finish. After use, wash it with warm water using a scrubber such as tawashi/palm brush (not necessary to completely remove oil on the surface), and lightly heat the pan again to completely dry it before storing it.

Q: Is it safe to use metal utensils for nitrogen iron pans? What to do if it's scratched?
A: Feel free to use an iron ladle with an iron pot; it's perfectly fine. The surface of the nitrided iron is significantly hardened through heat treatment. While it's quite resistant to scratches, even if it does get scratched, it's important to note that the nitriding treatment is not applied as a coating. Instead, it's infused into the surface of the iron through heat treatment. Therefore, scratches won't have any impact, and you can continue using it without any concerns.
Q: How to clean the pan when it gets burnt?
A: If the embossed bottom is not burnt, you can use a regular scrubbing brush (Tawashi). However, if it's burnt, depending on the severity, it's acceptable to use a stronger steel scrubbing brush. The surface is hard, so there's no need to worry about damaging it. If you encounter severe burnt areas, you can boil water in the nitrided iron pot to soften the burnt residue, and then use a steel scrubbing brush to remove it.
Q: When wiping the surface after cleaning the pan, the paper towel turned black. Is it normal?
A: The reason the paper towel turned black is due to the anti-acid coating on the surface of the nitrided iron. When you wipe the pot surface with a paper towel while it's warm, the coating becomes easier to remove. This occurrence tends to diminish with repeated use of the nitrided iron pot. The black mark on the paper is also iron, so it's not harmful.
