Yamaki is the Katsuobushi and Dashi company founded back in 1917 and located in Ehime, Japan. Starting with processing fish caught in local, now we’re utilizing varieties of dried ingredients such as dried bonito and kelp to produce a wide range of the Dashi products. In 2018, Yamaki USA was established in Oregon and we’re the first and only manufacturer of dried bonito shavings in the US.
