These particular cleavers are made from Hitachi White #2, which is of higher quality than what is usually found in Chinese-made cleavers and are heat-treated to a higher hardness for superior edge retention. Chuka bocho are used as multi-purpose knives in Chinese cuisine, cutting everything from finely julienned Tofu to whole chickens.
